Walnut Cookie Molds

Because I didn't write any of it down last year, and I hate having to reinvent the wheel:

One batch of shortbread dough makes 50 small cookies in the walnut molds.  (ish.  I got about 260 out of six sticks of butter.)

The melon baller with a flush scoop (not rounded) is the perfect amount of dough for one walnut mold.

Bake for 15 minutes.

Hold the mold with the kitchen tongs while extracting cookies.

You know...I don't think I've ever actually had any of your shortbread. I just keep hearing about the shortbread-palooza that is your house at the holidays.

Oh....you have something to live for then.

(Eloise, can I have one piece of the batch you make with spelt? I'm going to risk it against and my shiny new wheat allergy because if I'm going to have trouble with spelt, I want to enjoy the experiment getting there!)

Sure! Want the corn version or the no corn version? Since Carol is also allergic to corn, we've found an organic powdered sugar that isn't using corn starch as an anti-clumping agent.

Could that be? I guess it could - I don't cook for your family. It's waaaay too intimidating, because you're all such fabulous cooks.

I shall have to make you some shortbread.
